jerk lentil tacos

It was my goal for May to be a NO SPEND MONTH. Truth is, I bought some produce here and there. However, I’m really trying to clean out my freezer and pantry before grocery shopping for June. (I love grocery shopping, so this has been super hard).

So, here is a REALLY YUMMY recipe that I put together with some leftover groceries. I wish it had some lettuce on top, but I’ll add that next time. Each component was inspired by a bunch of recipes on my Pinterest board: this rice, these lentils, and these sweet potato fries. Just throw it all on a tortilla, top it with a little cilantro and squeeze some orange (I wish I had limes instead).

Gather:

  • Tortillas
  • 1 cup Brown Jasmine Rice
  • 1 can Coconut Milk
  • 1 cup Lentils (I used green lentils)
  • 1 Orange (or lime)
  • 1 Sweet Potato (2 is better, but I only had 1 left)
  • Spices:
    • 3 tsp Jerk sauce
    • 1 Vegetable Bullion cube + 3 cups water (or 3 cups veggie broth)
    • Onion Powder to taste (or 1 medium onion – chopped)
    • Cilantro to taste
    • Minced garlic to taste
    • Cinnamon to taste
    • Garlic Salt to taste
    • Turmeric to taste

Prepare:

Turmeric Coconut Rice

  1. Pour 3/4 of the coconut milk into your pot — Medium heat
  2. Add turmeric, cilantro, and a splash of veggie broth (or a touch of bullion)
  3. Once well combined, add in rice and cover with water.
    • (personal preference — stir rice and slowly add water until rice is soft and well cooked)

Jerk Lentils

  1. Put 3 cups of broth (water + bullion) into your pot — medium heat
  2. Add 3 tsp of jerk, minced garlic and lentils
  3. Once boiling (uncovered), add onion powder, cilantro, garlic salt
  4. Let it boil and simmer until the liquid is lower than the amount of lentils
  5. Add the rest of the coconut milk, stir and let simmer. — low heat

Crispy Sweet Potato Fries

  1. Peel and cut sweet potatoes
  2. Soak in bowl of water for ~ 1 hour
  3. Drain and dry sweet potatoes
  4. Toss with olive oil, cinnamon, and garlic salt
  5. Roast in oven at 425 degrees for ~30 minutes (15 minutes each side)

Finishing Touches

  • Place tortillas on plate
  • Top with rice => lentils => sweet potato fries
  • Sprinkle cilantro and squeeze a little orange on top.
  • ENJOY!
